GLOSSARY
Rouille Sauce - consists of olive oil with mash, garlic, saffron & chili peppers.
Rouille is most often used in the cuisine of Provence
Almond Skordalia - a puree featuring crushed garlic, almonds, potatoes & olive oil
Piperade - a typical Basque dish prepared with sauteed tomatoes, onion & peppers
Veloute - one of the five “mother sauces” of French cuisine featuring a cumin flavoured
stock
Paua boudin - a dark-hued typical French sausage made with paua
Sauce vierge - a classic French sauce made from olive oil, lemon juice, chopped
tomato & chopped basil
Barigoule - a traditional Provencal dish of braised artichokes in a tangy white wine broth
Pomme Boulangere - classic French gratin potatoes
Mushroom beignet - deep-fried choux pastry or crumbed style
